Memtest is the easiest and best place to start.
I find VMs to be unbearably sloe compared to a container. They just feel so heavy. I get the extra security layer, is that really why people are doing it or is there some other reason?

Kubernetes is overkill for most things not just self hosting. If you need to learn it great otherwise don’t waste your time on it. Extremely complicated given what it provides.
This is what is called a site to site VPN connection. Id suggest just using wireguard without tailscale given the amount of set up you need is minimal. A typical pattern is to connect a site to site VPN on each router of the given network you want to connect. Lots of router software support wireguard nowadays so depending on the software you may just be able to search for your router software + site to site VPN configuration.

The routers or computers you are using for this have to support forwarding traffic. With Linux this is pretty straight forward for other OSes I’m not sure how easy it is.
https://www.onlyoffice.com/ may be an option. They have hosted plans but you can just use the office suite with local files for free if you don’t need a yof the hosted offerings features
Is Kubernetes so pervassive that a helm chart unlocks that many more entities?

DNS challenge so you can get a wildcard cert? Or is it still per domain? I haven’t looked recently but it seemed difficult but I’d like to avoid transparency log installs where I can.

What expected problems did podman end up surorising you with? Is the software more stable and not constantly updated like docker? I want to move to podman at some point as well and I understand for a lot of cases it is just “drop in” but I run a lot of containers and I’m skeptical it’ll be that simple.
Especially with software distros like home assistant and matrix both explicitly pushing you to official docker due to some features.
Down votes be damned, you are right to call out the parent they clearly dont articulate their point in a way that confirms they actually understand what is going on and how an open source model can still have privacy implications if the masses use the company’s hosted version.
Throw up a pihole container and it’ll show you what is being queried pretty easily right on the dashboard.
VMs are not just as fast as containers.
